Marvelous Baklava Rolls with Date Espresso Custard

Custard Filling
Ingredients
✔️ 2 egg yolks
✔️ 3 tbsp sugar
✔️ 1 tbsp cornstarch
✔️ 1½ cups warm milk
✔️ 1 tsp vanilla extract
✔️ 3 tbsp Marvelous Date Spread with Espresso
Directions
1️⃣ Whisk egg yolks, sugar, and cornstarch until smooth.
2️⃣ Heat milk with vanilla until warm (not boiling).
3️⃣ Slowly whisk warm milk into egg mixture.
4️⃣ Cook on low heat, stirring, until thickened.
5️⃣ Off heat, stir in Date Spread with Espresso. Cool slightly.
Baklava Rolls
Ingredients
✔️ Phyllo (goulash) sheets
✔️ Melted butter (for brushing)
✔️ 2-3 Marvelous Medjool dates, chopped
Directions
1️⃣ Lay one sheet, brush with butter.
2️⃣ Spoon custard along one edge & sprinkle dates.
3️⃣ Roll tightly into a log. Repeat.
4️⃣ Place in buttered dish, brush tops with more butter.
5️⃣ Bake at 180°C (350°F) for 25–30 mins until golden.
Topping & Finish
Ingredients
✔️ Sugar syrup (½ cup sugar + ¼ cup water + lemon)
✔️ Marvelous Date Syrup (for drizzling)
✔️ Crushed pistachios
Directions
1️⃣ Pour warm sugar syrup over hot rolls.
2️⃣ Drizzle generously with Marvelous Date Syrup.
3️⃣ Sprinkle crushed pistachios & extra date pieces.
