Medjool Date Energy Balls
Nutty, naturally sweet, and protein-packed energy balls—perfect for on-the-go snacking or a post-workout boost!
Ingredients
✔️ 10 Marvelous Medjool dates, pitted
✔️ ¾ cup mixed nuts
✔️ ½ cup coconut oil
✔️ 1 scoop protein powder
✔️ A pinch of salt
✔️ ½ cup coconut flakes (for decoration)
Directions
1️⃣ Prepare the Dates
Remove the pits from the Medjool dates.
2️⃣ Blend the Base
In a food processor, add the pitted dates, mixed nuts, coconut oil, protein powder, and a pinch of salt. Blend until sticky and well combined, with small chunks of nuts for texture. If too dry, add a bit more coconut oil or a splash of water.
3️⃣ Shape the Balls
Scoop out small portions and roll into bite-sized balls using your hands.
4️⃣ Coat with Coconut Flakes
Roll each ball in coconut flakes until evenly coated.
5️⃣ Chill to Set
Place on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
6️⃣ Store and Enjoy
Store in an airtight container in the fridge for up to a week or freeze for longer shelf life. Perfect for on-the-go snacking!
